Five Ways to Use Mussel Powder

Mussel powder pairs well with tomato, onion, garlic, and herbs, but also in more unexpected combinations: for example, with coconut and apple, or saffron and chili. Just like anchovies, miso, and Parmesan, it works quietly in the background and can elevate an entire dish without dominating it. Here are some ways to get started.

Add the powder early for a bigger, rounder flavor. When mussel powder has time in heat – in butter, oil, or liquid – the flavor integrates deeply and builds body in the dish. Good in risotto, stews, or a stock that will simmer for a long time.

Add it towards the end for a more distinct oceanic flavor. Added just before serving, the powder gives a fresher, clearer character. Try it in soups, lukewarm salads, or directly on the plate.

Give more flavor to cold sauces, dips, or dressings. In mayonnaise, crème fraîche, or a vinaigrette, the powder dissolves easily and adds umami without you needing to heat it up. Start with a little, taste, and add more if needed.

Make a rub for meat, fish, or vegetables to be grilled. Mix mussel powder with salt, oil, and whatever else you want – lemon, smoked paprika, herbs, seeds. Rub it in and let it rest for a while before it goes on the grill.
