Pinsa is a light and airy pizza-like bread that is delicious with many toppings. If you wish, add asparagus, cold-smoked salmon, or smoked mussels for a more substantial dish.
- One pinsa bread
- 50 g grated cheese
- 1 dl ricotta
- 2 tbsp crème fraîche
- 1 tsp mussel powder
- Juice and zest from half a lemon
- Lettuce leaves
- Toasted pine nuts
- Chopped chives
- Black pepper
- Olive oil
Instructions:
- Preheat the oven to 230 degrees Celsius.
- Brush the edges of the bread with olive oil.
- Sprinkle the grated cheese over the bread and bake in the oven for about 5 minutes.
- Mix ricotta, crème fraîche, mussel powder, lemon zest, and lemon juice.
- Remove the bread from the oven and top with lettuce leaves and the ricotta mixture. Sprinkle with pine nuts, chives, and grind some black pepper over it.
