Pinsa with lemon & mussel cream

Pinsa med citron & musselkräm

Pinsa is a light and airy pizza-like bread that is delicious with many toppings. If you wish, add asparagus, cold-smoked salmon, or smoked mussels for a more substantial dish.

Ingredients
  • One pinsa bread
  • 50 g grated cheese
  • 1 dl ricotta
  • 2 tbsp crème fraîche
  • 1 tsp mussel powder
  • Juice and zest from half a lemon
  • Lettuce leaves
  • Toasted pine nuts
  • Chopped chives
  • Black pepper
  • Olive oil

Instructions:

  1. Preheat the oven to 230 degrees Celsius.
  2. Brush the edges of the bread with olive oil.
  3. Sprinkle the grated cheese over the bread and bake in the oven for about 5 minutes.
  4. Mix ricotta, crème fraîche, mussel powder, lemon zest, and lemon juice.
  5. Remove the bread from the oven and top with lettuce leaves and the ricotta mixture. Sprinkle with pine nuts, chives, and grind some black pepper over it.
