This spice blend can be used for many things, not just fries. Make a batch and store it in a jar. Then you can use it for roasted vegetables, potato wedges, and anything else you want to give a little extra kick to the flavor. The mussel powder gives the fry seasoning a unique character with depth, balance, and umami that elevates the flavors of what you're cooking.
Step 1: Spice Mix
Here's what you need:
1 tbsp coriander seeds
1 tbsp fennel seeds
1 tbsp black peppercorns
1 tbsp dill seeds
2 tbsp onion powder
2 tsp paprika powder (not smoked)
2 tsp cayenne pepper
Instructions:
Lightly toast the coriander seeds, fennel seeds, black peppercorns, and dill seeds in a dry frying pan until fragrant. Grind finely in a mortar, spice grinder, or blender and mix with onion powder, paprika powder, and cayenne pepper.
Step 2: Fry Seasoning
Here's what you need:
1/2 tbsp of the spice mix you prepared
1.5 tbsp mussel powder
2 tbsp salt
Instructions:
Mix half a tablespoon of the spice mix with mussel powder and salt. Sprinkle over freshly fried french fries, preferably immediately after cooking so that the fry seasoning adheres properly. One batch should be enough for 4 people, but we ourselves have noticed that people tend to season more as they eat. So it's hard to say how much is needed.
