If you want to make a good dinner really quickly, then mussel butter is your best friend. Combine with a nice piece of fish or meat and serve with potatoes, risotto, or anything else you fancy. If you make a slightly larger batch and freeze the leftovers, you'll always have a shortcut to a good dinner when you're short on time.
Ingredients
- 100-150 g cod (or other white fish) per person
- Potatoes
- Lettuce leaves, tomato, or other greens you want to serve with it
Mussel butter:
- 100 g butter, room temperature
- 1 tbsp mussel powder
- 1/2 dl finely chopped parsley
- 1 tsp lemon juice
- 3 cloves garlic, finely chopped or grated
- Salt and pepper to taste
Instructions:
- Mix the butter with the other ingredients.
- Form the butter into any shape you like, let it firm up in the fridge.
- Put the fish in the oven at 165 degrees Celsius, with a piece of mussel butter on top, for about 10 minutes, until the fish reaches 56 degrees Celsius.
- Serve with potatoes, rice, risotto, or whatever you prefer. The mussel butter goes with everything.
