Cod with mussel butter

If you want to make a good dinner really quickly, then mussel butter is your best friend. Combine with a nice piece of fish or meat and serve with potatoes, risotto, or anything else you fancy. If you make a slightly larger batch and freeze the leftovers, you'll always have a shortcut to a good dinner when you're short on time.

Ingredients

  • 100-150 g cod (or other white fish) per person
  • Potatoes
  • Lettuce leaves, tomato, or other greens you want to serve with it

Mussel butter:

  • 100 g butter, room temperature
  • 1 tbsp mussel powder
  • 1/2 dl finely chopped parsley
  • 1 tsp lemon juice
  • 3 cloves garlic, finely chopped or grated
  • Salt and pepper to taste

Instructions: 

  1. Mix the butter with the other ingredients.
  2. Form the butter into any shape you like, let it firm up in the fridge.
  3. Put the fish in the oven at 165 degrees Celsius, with a piece of mussel butter on top, for about 10 minutes, until the fish reaches 56 degrees Celsius.
  4. Serve with potatoes, rice, risotto, or whatever you prefer. The mussel butter goes with everything.
