A good white wine sauce that goes well with all kinds of fish and with seafood pasta sauce.
Ingredients:
- 2 shallots
- 1 sprig of thyme
- 1 tbsp butter
- 3 dl white wine
- 4 dl water
- 2 tbsp fish stock
- 1-1.5 tbsp mussel powder
- 4 dl heavy cream
- 2 tbsp butter
- 2 tbsp crème fraîche
Instructions:
- Sauté onion and thyme in butter without browning.
- Add wine and boil until about 1 1/2 dl of liquid remains. Pour in water and stock and reduce until about 2 dl remains.
- Boil cream in a separate saucepan until 2 dl remains.
- Strain the wine broth and mix with the reduced cream.
