White wine sauce

Vitvinssås

A good white wine sauce that goes well with all kinds of fish and with seafood pasta sauce.

Ingredients:

    • 2 shallots
    • 1 sprig of thyme
    • 1 tbsp butter
    • 3 dl white wine
    • 4 dl water
    • 2 tbsp fish stock
    • 1-1.5 tbsp mussel powder
    • 4 dl heavy cream
    • 2 tbsp butter
    • 2 tbsp crème fraîche

Instructions:

    1. Sauté onion and thyme in butter without browning.
    2. Add wine and boil until about 1 1/2 dl of liquid remains. Pour in water and stock and reduce until about 2 dl remains.
    3. Boil cream in a separate saucepan until 2 dl remains.
    4. Strain the wine broth and mix with the reduced cream.
